Try pumpkin and coconut milk (a classic), but also chipotle chocolate pumpkin soup, or a spicy southwest version. All it takes is a few new ingredients and you'll be tasting pumpkin in a whole new way.

May I suggest Olla Gitana/Gypsy Stew?
We just made this and really love it. you could do frozen veggies and either canned or frozen fruit to save on prep time. We used frozen green beans because there were none fresh locally. From the recipe, it sounds like you can play with available fruit and veggies. We also added a bit of cooked meat.
Non-pumpkin lovers can swap in butternut squash.
This post came at a perfect time. I made a really bland pumpkin soup yesterday. I tried to perk it up with some southwestern spices now it's too spicy....lol. Was thinking about adding in some plain yogurt to cool the heat and thicken it up!
I'll take a bowl of each! Delicious!
