I've also found that stuffing chicken breast is a quick and easy way to spice them up. My favorite combo is spinach and feta stuffed chicken breast wrapped in a slice of pancetta or proscuitto. To die for!
Chicken breasts are the great, healthy fast food. I can't wait to try some of these recipes. Ooh, those chipotle fajitas with black bean spread are fantastic! Made them for the first time this fall and they've become a regular in our dinner repertoire. Looking forward to trying some othese others too. I've been on a chicken thigh kick lately, but my husband really prefers white meat and sometimes I'm more in the mood for it too...

Many of these dishes can be made with "fake" chicken. My husband and I reserve meat eating for restaurants, travel, occasional barbeques, and dinner at friends' houses. While we primarily cook with tofu, tempeh and beans, we do use "fake" meat occasionally. Many of these dishes can be cooked with "fake" chicken, and I think the Thai green curry with fake chicken will be perfect for dinner tomorrow night. Thanks so much for the recipe ideas!
I would add "Pollo alla Senape" (Chicken w Mustard), so easy and so delicious... Too bad I became ovo-lacto-pescetarian and "Pollo" does not fit in my diet anymore :D
