No joke, I had avocado on toast topped with sugar plum tomatoes this morning. Then I saw this post! How timely!
Last week I ran out of mayo and made egg salad substituting super-ripe avocadoes. It's a new fav around here!

I usually prefer avocado with savory things, but I found out it tastes great mashed and mixed with a little honey spread on bread or muffins.
I love avocado for breakfast. It's also great mashed on toast, and topped with banana and a bit of honey. Sounds weird, but it's great.
And on top of savory oats, with an egg. Amazing, and filling!
Cut up with a some sugar sprinkled on top. Learned to love this in Brazil.
Filipino style: cut into a bowl w/milk (or milk substitute like almond, rice, or coconut milk) and sugar (or honey)...yum!
Hold on to your hats: This is the ultimate: 1 toasted buttered English muffin. Avocado Slices/fresh tomato slices/One poached egg/Chopped Basil/ mozzarella--slide under broiler until cheese melts/ Chopped prosciutto/ Black Pepper. It my heavenly summer breakfast alfresco.

My favorite 2nd breakfast: 2 fried eggs on toast with avocado or guacamole spread on one slice & home made harissa on the other slice. Bonus if there are a couple strips of leftover bacon sitting in the fridge. Or a slice of a mild cheese. Sweetness from the avocado, spice from the harissa, & the runny goodness from the eggs. Delicious!

Other than sprinkled with sugar and eaten with a spoon (that's how my Mom taught me), I love this:
Lemony Avocado Halves w/ Tuna:
Just mix half a cup of tuna with a generous sprinkling of lemon juice, olive oil, cracked black pepper,
Put the mixture into a halved avocado.
Eat with a spoon!
trust me, it's the perfect snack. :)
I love avocado mashed on my scrambled eggs, on toast... also I love making chocolate pudding with avocado!

There is no breakfast that can't be improved by the presence of an avocado, even if you just eat it off a spoon. My mother's all-time favorite is toast with avocado and tomato, topped with cheddar and broiled in a toaster oven until the cheese melts... yum.

My favourite: mashed avocado on top of 12-grain or pumpernickel toast spread w/ butter and vegemite! It's similar to vegemite and cheese, only fresher! I sometimes add a slice of tomato and salt & pepper...
First I love some of the ideas here!
I like to get a couple tamales, cut tamales into slices and heat them a bit, mix up your eggs and pour over the tamales, once the eggs are almost set like you want, put in some dices avocado, mix a little, put some shredded cheese over it and cover for a minute to let it bet melty..., add a sprinkle of salt, pepper and chili powder.
Also a tamale omelet covered with fresh avocado slices is wonderful...
