I've made #5 several times, and it is utterly fantastic! And very very very simple.
I recently made this Red Quinoa and Roasted Acorn Squash Salad. Roasted acorn squash and caramelized torpedo onions are tossed with red quinoa and a pistachio-arugula dressing. So tasty!
I also like making a no sauce pizza with mozzarella/gorgonzola cheese topped with roasted acorn squash and an arugula salad.
Can you tell I like the squash-arugula combo?!

I made stuffed golden acorn squash last night! I stuffed it with garlicky spinach topped with grated parmesan cheese. It was delicious!
I love acorn squash just roasted plain, and used as a dip with low fat Wheat Thins. The little bit of salt from the crackers along with the crunch is so good with the squash! Don't get me wrong, I'm not a low-fat person, but for some reason I like these better than the regular ones; I think they are crunchier...

I've been following an earlier tip from the kitchn to roast acorn squash halves with oil, salt, pepper and a garlic clove inside. I scoop out the squash, mash with garlic clove and some goat cheese, then finish with my magic ingredient: a drizzle of black truffle oil. The earthiness of the truffle oil gives the dish just enough extra complexity.
Currently trying the penne pasta recipe, looks good so far!

I noticed that all of the photos depicted the squash with the skin on. I roasted acorn squash recently for the first time, and found the skin unpleasantly bitter. Did I do something wrong, or am I just unaccustomed to the taste?
