• 6 Rice – Rice is a common breakfast ingredient in many Asian cultures. We like the idea of going healthier with brown rice, and simmering it with apple juice or rice milk for a sweet porridge or pudding like this recipe from Choose Veg.
• 7 Scrambled tofu – An endlessly adaptable favorite. Crumble up some tofu (silken, firm, extra firm, whatever you prefer; just press and drain it if it's packed in water) and sauté it with herbs, spices, or vegetables. Stay tuned for a recipe later this week!

A vegan kedgeree substituting tofu for the eggs and maybe lentils for the fish might be good too.
Vegan omelets with besan (chickpea flour), tomatoes, onions, cilantro, salt and cayenne pepper. Very filling and completely delicious.
I have been totally out of breakfast ideas, often resorting to roasted potatoes with refried beans, so I'm thankful for this post and the comments. Thanks!
Our favorite vegan weekend breakfast are these yeast-raised waffles. Ground flax and a slow rise give a great flavor and texture.

Re: sweet potatoes. I've been doing this quite a bit. You can bake them all at once and freeze them for weeks or keep them in the fridge for about 10 days. I make a chipotle cashew cream by pulsing raw cashews with a bit of water, chipotles, cilantro, garlic and lime. The thick cream is HEAVEN on a warm sweet potato.
Yummy ideas! Remember if you've got a blender, sometimes a smoothie makes a great breakfast too!

funny i hadn't read this post yet and made a baked sweet potato for breakfast today rather than my usual oatmeal. sprinkled with just a bit of kosher salt, it was nice to enjoy such a simple but delicious meal.
Great post! Isa's Vegan brunch books is really great it turned out be be one of my fave vegan cook books. Everything is totally doable, even in the morning, and all recipies I tried turned out to be really delish and fun.
i'm a vegetarian, but used to be vegan.
i hate to break it to you, but you just can't get vegan french toast to taste like the real deal with soy milk and apple sauce.

Oatmeal - One of the simplest vegan breakfasts, made with water or a vegan milk. Top with fresh fruit or stir in dried fruits like raisins.
Fruit Salad - Exotic fruits like papaya, berries, pineapple, mango, etc. are a nice change
"Simple Mexican Breakfast" - heat up some leftover rice and beans and enjoy in warm corn tortillas with ranchero sauce and avocado
Vegan Pancakes/Waffles - Most mixes are vegan, or you can modify pretty much any recipe. Use egg replacer and vegan milk or water, and serve with syrup, vegan margarine, and fruit
Fried potatoes with sauteed veggies - A nice hearty breakfast
I like to make a vegan version of an egg Mcmuffin. It's really simple and quick. Basically you coat your tofu slice in nutrional yeast and cook both sides in olive oil until crisp, once cooked I add some creole seasoning and fresh ground pepper. I toast an english muffin and butter it with veganaise then I add Daiya cheese to it. Sometimes if I have vegan sausage patties I will add that too. Everyone who has tried it has been impressed that it is vegan, it's pretty flavorful, not to mention a lot healthier than the original!
here are a couple of Indian vegan breakfast options - upma which is made from cream of wheat, idlis - steamed rice and lentil cakes
How could you leave out oatmeal? I use my supermarket's brand of organic oatmeal with maple syrup. It's not too sweet, and I don't need to add a single thing. Otherwise, I love Trader Joe's frozen steel cut oatmeal. (It's just so awesome.) And I love Idli. You can make your own, or pick up packs of the dried stuff, or containers of premade idli batter, at a local Indian grocer. Yum. Don't forget to pick up some coconut/peanut chutney to go with it!
i agree... tempeh bacon is nothing like bacon. and that's fine. its a completely different food. it shouldn't even really be called bacon, they should just call it tempeh strips or something or come up with a fancy new name for it. Tempeh delight!
side note: I got to meet Isa at a new year's eve party in Omaha! pretty sweet
Toast with peanut butter is my usual, and it happens to be vegan, though I'm an omni who eats vegetarian at home. Toast just comforts me in the morning. Toast with banana's another good one. Toast with jam, however, doesn't quite provide the same sustenance to get me all the way to lunch feeling sated.
Homemade muesli with soy milk works, too. (Oatmeal's lovely, of course, but seriously I don't want to put in the effort on a weekday morning.)
Looking forward to the scrambled tofu recipe. I always get this in restaurants and love it, but have yet to find a good recipe to try it at home.
OOh, and the warm and nutty quinoa recipe from 101 Cookbooks is divine, especially when berries are in season.
I eat kicheree, chillas, potato parathas, and idli/sambar a lot for breakfast. They are totally vegan and delicious. So many wonderful Indian recipes work for vegans. I'm not even vegan and I eat them because they are fabulous.
I am not vegan. There are a lot of vegan recipes I use that are awesome, but I'm also looking for meat. Vegan-heavy posts these days...

Another addition to breakfast ideas: coconut milk pancakes! I'd only do this on the weekend, myself, but then I'd freeze and eat them as "toaster pancakes" the rest of the week. Far more addictive, in my opinion, than soy milk versions.

Migas! Whenever I've got some leftover baguette, I toast it a bit under the broiler, then slather on refried beans (which I make vegan) or regular black beans and hit it with some chopped scallions and chipotle tabasco. Of course, I like it best with a bit of shredded cheddar, but a few cool slices of avocado is a fine substitute.

I just polished off a bowl filled with Grapefruit Sections, Fresh Pineapple, Apple, Banana, Red Grapes, Avocado, Green Onions, Kale, Romaine, Spinach, Ground Flaxseed, Walnuts, Sesame Seeds, Fresh Lime Juice and a small amount of Maple Grove Farms of Vermont Fat Free Poppyseed Dressing on top! I made a huge bowlful last night that will last me a few days. YUM!
My favourite vegan breakfast is bruschetta :)
Utterly delicious...grill up some tomatoes (I prefer sweet cherry tomatoes!) with a little olive oil and fresh basil. Halve a ciabatta lengthwise and toast, then rub with a garlic clove...top with the tomatoes and enjoy.
This also makes a great starter course to a tasty italian meal!!
Isa has a recipe for "Fronch Toast" in Vegan With A Vengeance that tastes exactly like the real thing.
My favorite breakfast is shredded sweet potato hash browns on top of an english muffin that has been smeared with avocado, topped with arugula or spinach, and hot sauce.
Though I'm not vegan, Vegan Overnight Oats are my standard when I know I'll be in a hurry the next morning. Other delicious options: avocado toast, oatmeal with pumpkin puree and spices, green smoothies...the list goes on!
Shiitake or portobello bacon, dressed with my old favorite flavors brown sugar (or maple syrup) and black pepper does the trick for me. As long as I cut it into pieces, instead of trying to make bacon-like strips, it works great for fulfilling my old cravings (6 years later I was still missing bacon so I had to find a 'fix'):

The second recipe here, Sweet Quinoa Pilaf, is outstanding, and endlessly variable depending on what nuts, seeds, and dried fruit I have on hand. I do use regular coconut milk and it doesn't make it too rich. Also great reheated all week.
Also, any kind of dal is a great hot breakfast.
