All hail the hearty oat! If you have a stock of oats in your pantry, don't assume oatmeal is your only option. Although it's a go-to use (and who wouldn't want a taste of this baked pumpkin oatmeal, for example) oats can be used in a variety of sweet and savory ways, from cardamom oat pancakes to savory cheese-herb granola.

These recipes look wonderful, but steel cut oats also make a wonderul soup grain, similar to barley or farro. My grandmother used to make hubagrits (the Yiddish word for oats) soup that was the ultimate comfort food. I have never had it outside my family. If you would like to check out the recipe, see my blog at http://alandivack.blogspot.com/2010/01/comfort-food-hubagrits-suppe-in-style.html
@AlanDivack — Thanks so much for your link. That soup sounds just wonderful — true comfort food. As soon as the weather gets really cool again down here I'm making this.
I like to toast rolled oats, and then grind them up. I combine them with flour to make it tastier and more substantial.
It goes in the crust for these bleu cheese, pear and spinach galettes.
It's in these peppery oatmeal buttermilk biscuits.
And of course I use rolled, toasted oats in vegetarian haggis!
And some classic oatmeal cookies, but they have chocolate covered ginger in them. A natural anti-depressant!
I'm just wondering - I bought a whole bunch of 90 second microwave oatmeal packets, and now can't stand the thought of eating another bowl of it. Can I use my quick oats in these recipes? What's the difference with quick oats as opposed to normal oats (are they just processed a bit to make cooking time quicker?)
