I grow so tired of these "stocking stuffer" ideas that are $50 or $100. Just because it's small doesn't make it a stocking stuffer, people! At least, not for my budget.
I have the same egg crate from Crate & Barrel (about $6-7) and love it for my hard-boiled eggs.
Yes, all great ideas. I just got my friend a 3-pack of Rancho Gordo beans and got her the Christmas variety.
I personally would like a set of these.
Also, I don't know how a knife in a stocking would go over, but I love my Kuhn paring knife.

I totally disagree with Kathleen from E18 about the garlic peeler. I love it. It's perfect for any application where you might want whole undamaged cloves, peeled neatly.
Its a great tool for someone like me who is wary of smashing knives with their hands and is prone to kitchen injuries.
