Somehow, I always forget about fish when it comes to quick weeknight dinners. But fish — along with shrimp, mussels, and most other seafood — is practically tailor-made for speedy, healthy meals. Baked in the oven, fish fillets can be ready for the table in under 20 minutes. Broiler recipes, like our Simple Salmon Teriyaki, are even quicker! With the fish so easy to prepare, that leaves us with a little extra time and energy to make something flavorful to go with it, like the chimichurri sauce for our baked halibut or some couscous with cilantro vinaigrette to serve alongside baked salmon. This said, there's nothing wrong with a simple squeeze of lemon and a sprinkle of pepper!
