They all look tasty but 6 of the 10 meals are basically pasta. I'd like some healthier ideas please...

With a two year old I feel like I am making a science of this (here)... @judiAU, pasta is pretty healthy, just depends on everything else you are eating/what with. I do love Quinoa and Farro, too.

my quickest-of-the-quick, its-10:30-and-my-yoga-class-ran-long-and-I'm-so-hungry-I-might-faint dinner: migas.
my favorite ten minute meal is tacos with scrambled eggs, feta, and avocado. it's soo good! and it hardly takes any ingredients. it's my "oh crap I don't know what to cook" or "it's too hot to hang around in the kitchen" meal, but we like it so much I make it more often than that.

also, we did an adaptation of olga's orzo with summer vegetables and bacon in the fall, using some chicken, spinach, zucchini and broccoli since we didn't have nice looking cherry tomatoes or arugula available. we really enjoy it year round, and tend to make it once a season, so it tastes different every time!

We made a really good, fast dinner last night with some leftover steak from Sunday's dinner. Heat some bbq sauce on med-low in a small pot (add a little water). Cut the steak into tiny pieces and mix in with sauce on stove. Let it heat a few minutes til the meat is warm. Then you can put it on bread, a tortilla or even a salad. It took 10 minutes tops. Heat up some veggies or have a side salad.
The Baked Eggs and Vegetables is a lifesaver! I love this recipe. It's quick, easy, hearty, and tricks my boyfriend into eating veggies! You can easily feed 3 people on $4 and that's a winner in my book!

I love the udon soup and am looking forward to the pasta with sausage and greens as well as the one-bowl mac & cheese.
Another 15 minute meal I love (but needs prepping) is oven-roasting vegetables and freezing portions in the freezer to later defrost in the microwave and toss with pasta.
