Linguine with zucchini and onion is a great combination, especially when the onion and zucchini are sauteed well with extra virgin olive. We finish our dish with lots of grated cheese.
Wow, these look delicious! I would love to see some pasta-less vegetarian meals as well. These seem very carb heavy (but amazing, nonetheless).
Skip/substitute the Parmesan included in many of those recipes as well if you want the recipes to be properly vegetarian, as authentic Parmesan is always made with animal rennet due to its protected designation of origin classification.
Proper Parmesan is never vegetarian, and recipes including it should not be listed as vegetarian without a note explaining this issue. Vegetarians generally will be aware of this, but it's helpful for people who are not vegetarian who are cooking for those who are.
@ thehoopiestfrood not sure if its the same in all countries, but in the U.S "vegetarian" means no meat, but dairy (such as cheese and butter) as well as eggs are o.k . What you are referring to as far as eliminating the cheese is "vegan". Vegan don't eat any animal by products including honey.
@nereid -- previous commenter was referring to rennet which is the enzyme blend used in cheese production, not the dairy. Vegetarian Parmesan style cheese is available and will be labelled as produced with vegetable rennet or microbial enzymes. Parmigiano Reggiano can only be produced using animal rennet. Both are dairy cheese.
