I made that pumpkin tortilla soup the other day with the only modification an addition of a can of black beans. Love that recipe.

The recipe I use for Tortilla soup is great with or without the chicken. The soup is thicker so it's pretty hearty even without meat. Not sure it'd work for a vegetarian cuz there is chicken broth, but it works when I don't have chicken.
