Whether you're staying cozy at home after this weekend's winter storm or planning a simple homemade Valentine's Day dinner this year, we're thinking you could use a few quick, but classy, meals this week. Like this Baked Fish, Spinach, and Tomatoes, which requires just handful of ingredients but makes a very elegant meal for two. But if you're in the mood for something creamy, go for Authentic Spaghetti Carbonara or Blackened Chicken with Creamy Angel Hair Pasta. Lots of options here for upping the fancy-factor on your weeknight meal.
Personally, I define a fancy meal as anything that I might conceivably order at a restaurant. Pork chops, for instance, are something that I find I rarely cook at home, but often order when I go out. But there's really no reason not to cook them at home! Pork chops, fish, shmancy Italian pastas: these are all very simple foods to cook for ourselves -- and for those we care about.

Beautiful recipes
My go-to meal is a honey mustard herb crusted salmon. It's perfect for one or two, or a crowd. Either way, it's super easy to prepare and full of flavour, and ready in just 18 minutes. I make a salad while it's baking in the toaster oven. Recipe cheat sheet included in the post too.

That Carbonara stuns me.
My husband and I love to try Asian food, such as Thai chicken coconut soup or Chinese fried rice.
love your definition of fancy. to me it would be seafood as i haven't yet conquered that fear. cooking fish is one of my goals this year!
We love, love, LOVE this Garlic Lemon Shrimp Bruschetta. It's modeled after one of our favorite restaurant dishes: http://www.neighborfoodblog.com/2012/08/garlic-lemon-shrimp-bruschetta-with.html
And this Caramelized Chicken and Mushroom dish can't be beat. I'm a sucker for mushrooms soaked in butter and wine. http://www.neighborfoodblog.com/2011/10/caramelized-mushroom-and-chicken-with.html.
