Culture Editor @arielknutson made this Pineapple Refresher for #kitchnhappyhour Serves 1 1 oz lime juice 2 oz white rum 4 oz pineapple juice Mint, for garnish Add lime juice, rum, and pineapple juice to shaker with ice and shake. Strain into glass with ice, and serve with a sprig of mint. 🍍🍍🍍

Strawberry Rum Smash Serves 1 1/2 teaspoon sugar 1/2 lemon, juiced 5-6 mint leaves 4 large strawberries, hulled and sliced 3 ounces white rum Club soda Muddle the sugar, lemon juice, and 3 mint leaves at the bottom of a glass. Add about 2 whole sliced strawberries to bottom of glass and lightly muddle. Fill the glass with ice, add the rum, and top with club soda. Garnish with extra strawberries and mint.

Serves 1 1 oz Gin 1 oz Aperol .5 oz Cointreau 1/2 lime, juiced Champagne or Prosecco Add gin, Aperol, Cointreau, and lime juice to shaker filled with ice. Shake well and strain into glass. Top with sparkling wine and enjoy. ☀️☀️☀️
Today for #kitchnhappyhour @bitbyafox made coconut mojito popsicles. It might just be the coolest way to drink this summer. Recipe below! 3/4 cup sugar 3/4 cup water 1 cup coconut water 6 sprigs of fresh mint 1/2 cup freshly-squeezed lime juice 1/4 cup rum 1 lime sliced into thin lime wheels Combine sugar and water in a saucepan over medium heat until the sugar dissolves. Add mint and stir until boiling. Remove from heat, cover, and let stand 10-15 minutes. Using fine mesh, strain syrup mixture into a pitcher. Add lime juice, coconut water and rum to the strained syrup and stir. Once mixture is completely chilled, pour into popsicle molds, placing lime wheels in each mold, and freeze.

Serves 1 3 Basil leaves 2 Strawberries, sliced 1/2 lemon, juiced 1 oz limoncello 1 oz vodka Club Soda Put the basil and strawberries in a glass and muddle. Add the lemon juice, limoncello, and vodka. Stir. Add ice. Fill glass with club soda. Garnish with lemon and basil.

SPICY HONEY LIME & MINT COOLERS Serves 4 8 ounces Vodka 8 tablespoons fresh squeezed lime juice 8 tablespoons Hot honey simple syrup* (see recipe below) Large bunch of fresh mint Club soda or seltzer to float 4 lime wheels for garnish Crushed ice Recipe: In a large pitcher combine crushed ice, a handful of fresh mint leaves, vodka, lime juice and hot honey simple syrup and stir until ingredients are chilled and mixed thoroughly. Pour over ice in hi-balls and leave some room at the top. Float seltzer or club soda on top and garnish with fresh mint sprigs and fresh lime wheels. *How to make the hot honey simple syrup: 1 cup Hot Honey 1 cup very hot water In a small pitcher combine hot honey and hot water and stir until honey has dissolved into water. Set aside.

Iced Rooibos Tea Cocktail Serves 1 4 oz Rooibos Tea Concentrate 4 oz Honey Bourbon 4 oz Simple Syrup 10 Mint leaves Lemon slices to garnish To Make Concentrate: 4 cups boiling water 6 rooibos tea bags or 6 tbsp loose leaf rooibos tea Pour water over tea and steep for 3-4 minutes. If using loose leaf tea, strain. Measure 4 oz and refrigerate remaining concentrate in an airtight container. To Make Cocktail Combine and stir all ingredients and pour over ice. Garnish with lemon slices.

Blood Orange Boulevardier Makes: 2 cocktails 2 3-inch strips blood orange zest 3 ounces freshly squeezed blood orange juice 3 ounces rye whisky 1 1/2 ounces Campari 1 1/2 ounces sweet vermouth Combine blood orange juice, rye, Campari, and vermouth in an ice-filled mixing glass or cocktail shaker and stir well. Strain into cocktail glasses. Garnish with a twist of blood orange zest.

The Sparkling Salty Dog Serves: 1 1 ounce gin or vodka 2 ounces fresh grapefruit juice 2 ounces club soda coarse sea salt ice Rim a cocktail glass with salt, and fill it with ice. Pour in your preferred spirit, and top with grapefruit juice and club soda. Stir, and serve!
