Bubby's Brunch Cookbook has a great bacon, leek, egg, and Gruyère casserole. It was the show stopper at a brunch I had. So simple, so delicious!

I have made the strata with sausage, spinach and eggs (the first one)... It's delicious!
All I can think of is my favorite midwestern egg bake...so incredibly delicious!
This unfortunately falls into the problem I have with most breakfast recipes...all of these are egg based and as an avid egg-hater, this wipes all of them out for me.
Short of a casserole of french toast, if you don't like eggs for breakfast, your SOL it would seem.
made the savory sweet life breakfast casserole this morning (prepped last night) and after a morning of shovelling ourselves out of a million feet of snow, had that thing steaming and waiting for us. Hubby said it was the most favorite breakfast he's ever had! May have been a bit of snow maddness, but it was good!
I have made the Zucchini Breakfast Casserole from Simply Recipes more times than I can count. It's awesome! I've added spinach to it too, for an extra veggie boost.
I'm very eager to try the first two - they look delicious!
I made Giada deLaurentis' breakfast strata with fruit for the first time over Christmas and have made it 6 times since then - it is soooo good, plus I discovered it also makes a great dessert if you just add whipped cream or vanilla ice cream.
I'm trying to come up with a breakfast tatertot casserol recipee - any suggestions?
