I was shown the EASIEST crêpe recipe recently:
Make a well in 250g of flour
Whisk in 4-5 eggs
Add 500ml milk, continue whisking
Rest for 30mins
No need for oil, warm milk, beer or straining the batter. Just smear a hot pan with some oiled kitchen roll, and add a ladle of batter. Beautiful, thin crêpes every time.
