Let's face it, of course Thanksgiving is all about the turkey but it also has a whole lot to do with pies (especially so in my fiance's family). It seems as though everyone rushes through dinner anticipating the arrival of the pies on the table.
It seems as though the pies are already being cut up and dished out before they even touch the table. Whether it's apple, pumpkin or sweet potato — it gets devoured. The key to a great pie — a great pie pan. Some people swear by aluminum throw-aways while others swear by cast iron (we're with those cast iron lovers!)

Yeah! I just got a Pyrex pie pan and am very happy with it! Lovely pie and no burnt edges.
I like "SimplyLite," the new, light, white glass pie dishes from Corning. They bake well, clean up well, and look clean and neat on the table--you can use them for serving all sorts of things when it's not Thanksgiving.
No Emile Henry? I'm a pretty dedicated fan. ;)
Remember, Cooks Illustrated rates the glass Pyrex pie dish as the best one.

Funny! My favorite pie pan is actually a couple of glazed crocks thrown by a local potter. Couldn't have been more than 10 bucks to get the both of them- and I've been using them for years for all kinds of baking and roasting!
Pyrex or other glass is my choice.
Though sometimes I will use those disposable foil ones if I'm taking pie somewhere and don't want to have a dish to bring back.
