How are you staying cool? Not eating anything hot! Here come cold soups... Tomato gazpacho with roasted tomatillos, avocado and basil cream below.
Gazpacho with Roasted Tomatillos, Basil Cream and Avocado
3 tomatillos, halved and roasted at 400°F for about 20 min.
3 med tomatoes
half a bell pepper
half a cucumber
half an onion
1 garlic clove
Add everything to blender... blend!
1 cup cream
1 cup basil
Using a food processor, blend in short bursts until basil is gone... we don't want butter here.
Serve: Spoon gazpacho into bowl, mix in some avocado chunks and drizzle with basil cream! YUM.
PS Serves 4 small bowls as an appetizer.
