Q: I'm looking for book, website or recipe suggestions for wild game.
We'll likely be filling the freezer with a bear and some venison this year and I'm interested in fancier recipes than bear stew or venison meatloaf. Any ideas?

i have hunter friends who use this and like what they've tried.
The National Wild Turkey Federation has a good recipe archive for a variety of game -- not just wild turkey:

Venison often yields well to marinades -- regular acid marinades containing wine and such, but also particularly beer marinades. And it's a good candidate for the crock pot. Here's a recipe easily adapted to a crock pot:

I understand bears can carry trichinosis, so please research that issue and take appropriate precautions.

I would check out a sporting goods store that caters to hunters and outdoorsmen - they often have game cookbooks near the camping supplies section (usually by the cast iron or huge outdoor kettles).
P.S. My great-uncles make killer deer sausage out of their venison, both spicy and mild. That could be a good way to use up some of the tougher or less desirable cuts of venison, especially if you mix a little fatty ground pork in there.
I'd try bear meat. But is it an ethical eat? Googling it now but I'd love to hear some opinion!
My husband gets a deer almost every year, and we treat it just like beef - just have to be careful not to overcook it as it's a lot leaner than regular beef.
