Q: Does anyone have ideas for recipes using canned salmon? Whenever my boyfriend's parents come into town to visit us, they kindly bring us some Costco-size toiletries, but they also bring us Costco-size packs of canned pink salmon.
I love the stuff--we've made croquettes, which are good on occasion, and salmon-salad sandwiches are all right -- but is there anything else I can make with it so I don't get buried in cans of salmon? Thanks!

I don't love canned salmon (I grew up on the west coast, I much prefer fresh salmon!) but my husband makes great salmon burgers with canned salmon. They're way better than the premade salmon burgers I've tried.

salmon on toast - in a pot make a roux with milk to desired consistency, add in the salmon, season with salt & pepper, add some frozen peas and pour over whatever kind of toast you like.
Mixed with a little sour cream and lemon juice, folded into an omelette.
I also love salmon tossed into an avocado salad. Something about salmon pairs well with avocado, and both of them love citrus.
Canned salmon; a couple of handfuls of soda crackers, crushed; handful or so of finely chopped onion, same or celery, black pepper.
Shape into patties and fry or shape into a loaf and bake.
You can also drain the pink salmon, mix with chopped celery, some toasted sliced almonds, a few raisins, and a little bit of onion. Use italian dressing llightly. Serve on mixed greens or take in your lunchbox as is to have with crackers. This works just as well with tuna and Costco has a knockout canned tuna.
My D.I.L. makes a cold pasta/salmon salad that is out of this world. Has capers and black olives in it, too. I don't have the recipe, but I bet you can find at least a dozen on the internet. It is amazingly delicious, and when she serves it---it's all we want, and crackers. Yum.
Salmon nicoise salad; Pasta tossed with canned salmon, lots of lemon, dill, steamed asparagus and a little bit of butter and/or Greek yogurt or sour cream....

Throw it on a salad! Or instead of tuna salad sammiches you can make salmond salad sammiches.
A nicely done potted salmon is a treat at teatime or on a buffet table. Gawd...that sounded so Downton Abbey. But, no, really, it's good! Or just call it salmon rillettes a la David Lebovitz or Thomas Keller.

spicy salmon rolls! My favorite quick weeknight dinner.
mix salmon, siracha, and mayo. spread cooked sushi rice on a sheet of nori, add a strip of salmon mixture + some avodaco (optional), roll up, & enjoy!
Salmon pie! Make a batch of mashed potatoes, mix in the salmon, throw in spices and what-have-yous (diced carrots, peas, a bit of cheddar -- whatever you have leftover) and use aspie filling. Cheap & all encompassing meal. My kids eat it with ketchup, and my dad eats it the traditional way: with béchamel sauce to which we add chopped hardboiled eggs.
I love salmon croquettes with grits for breakfast. I call it my back of the cabinet breakfast because I've usually made my way to the back of the cabinet if I'm pulling out canned salmon. I use a recipe for crab cakes and just sub the salmon for the crab. Good luck.
Ditto the salmon loaf. Salmon, bread crumbs, egg, spices to taste, sauted onions [and carrots if you like]. Then bake in a loaf pan. Delish! Dill is a good add, and LOTS of lemon.

I too have the "in-law costco canned salmon" situation...
I mix it with warm brown or red rice, sesame oil, rice or cider vinegar, spinach/edamame and shredded seaweed for a sushi salad. You can add whatever leftover veggies you might have, it's very flexible.
I've also used it on pasta with garlic and olive oil, parlsey and capers.
Any pasta, maybe a good fettucini, a cream suace with shallots or scallions and the salmon, or as a stuffing for raviolli ;)
Make creamed salmon! It's good I swear! Make a roux and toss that salmon in at the end! Eat on toast or in those amazing pastry puff cups!
I buy that same kind at Costco for a quick and filling lunch. I mix it with scallion cream cheese, add a splash of white vinegar, and spread it on whole grain sandwich bread with arugula. Delicious!
Spicy salmon cakes with lime pickle mixed in. I can't find the recipe I use right now, but they're so tasty.

Most folks I know, dh included, love tuna. I do not. But I learned quickly (out of sheer desperation) that salmon can easily sub for tuna.
Think outside the box....(hint: think 'meat' instead of 'salmon') The pasta & omelets won't be so elusive this way ;) Also, search for seafood recipes instead of 'salmon' recipes. You'll be surprised at what pops up.
If you like dill, the salmon dill loaf is delicious.

We get a lot of canned salmon from friends in Alaska and make quiche with it. It's fantastic with a bit of dill and some good cheese in it.

You can always make 1970s-style salmon mousse. My mom still makes it, and before I went veg, I used to love it. (The rest of my family still digs in with abandon.)
@cei-face--my first thought was Creamed salmon and peas too! This was one of my top three favorite meals growing up. Looks very unappetizing but sooo good. Here's a recipe I found (looks very similar to the one I ate growing up)

Have to say this but please never label canned tuna as sushi!!! sushi is technically just rice with vinegar but labeling cooked fish in a can as sushi is just blasphemy....
I use canned salmon in chowders and soups. It's very good in a corn or potato chowder, just add it at the very end since it doesn't really need to cook.
Also, try it in Amy's Tuna Cheddar Chowder (you can google the recipe). That's a family favorite.
Ditto the chowder idea, I just throw a can in to a good corn/poblano chowder recipe I already love for protein.
A fave of my husband's that I make often is a can of salmon mixed w/ 1 avocado, diced; 1 lime, juiced; a few dashes of soy sauce; toasted sesame seeds and chopped cilantro. Eat on a bed of greens or over sticky rice.
Lastly, I sometimes add some canned salmon to a BLT. Sounds weird, maybe, but I love it!
I call them salmon patties, must be a southern thing. love um!
My aunt makes a great salmon salad that I love: canned salmon, diced peeled apple, mild onion and hard boiled egg with just enough mayo to bind. It's an unusual flavor combination that for some reason just works! It tastes surprsingly fresh, with a very nice crunch. Could be a good variation for the salad you make.

Salmon and Leek Quiche with Gouda cheese. Perfection, if I might say so myself.
"Smoked" salmon dip is great - mix with cream cheese, grated onion, parsley, lemon, and a drop or two of liquid smoke, and serve with crackers. Great for parties.
Or you could do what I do and eat it right out of the can, cold. :)
