Q: Each week at my research group's lab meetings someone is in charge of bringing food for everyone. It is my turn in a couple weeks, and I want to prepare something truly delicious!
There are a couple issues though. We have one vegan, one gluten-free, and limited cold storage or heat up space (limited to a microwave). Other people have already done hummus and chips and salsa (all the classic stuff), but I want to be original.
Any recipes you guys can think of?

• Vegan/Gluten-Free Chocolate Cupcakes with Coconut Icing
• Coconut Sticky Rice - with mango or banana
• 4-Ingredient Banana Oat Bars
• Fresh fruit
• Assortment of cookies, some gluten-free (like these or these) and some vegan (like these or these).

Don't give oats to a GF person... even if they're GF oats, a lot of people with celiac (10%) have oat sensitivities too.

I can't think of a recipe off the top of my head, but I just tried Two Degrees bars (in whole foods) that are gluten free and vegan. They are a one for one company that donates a nutrition pack to a malnourished child every time a bar is purchased. They taste great and a great mission--just wanted to pass that along :)

Everything is gluten free & most of it is vegan because her kids have gluten & dairy allergies. If you want to make something sweet I recommend the black & white cake!
If you're looking for a quick, ready-made sweet and have a Trader Joe's nearby, their snickerdoodle cookies are a personal favorite. They're vegan/gluten-free and chewy, sweet and ready to eat out of the box.
I've eaten a lot of gluten-free and vegan treats and these are at the top of my pre-made list.
