Q: I was hoping for some advice from the devout vegetarians among your readers. I'm hosting a veggie friend (dairy no, but eggs yes) for brunch but have no idea about what to make.

Chilaquiles are good.
You can make them with a red or green sauce.
With lots of cheese and fresh pico de gallo and avocado and good farm eggs you've got a very substantial and enjoyable brunch dish.
Rounded out with fresh fruit and champagne margaritas you're on your way!

I've made a version of that with thinly sliced potatoes, egg and a little truffle salt. And maybe a crisp salad on the side.
I also second Art's chilaquiles suggestion. I like to add beans (pinto or black) to mine. And you can leave off the cheese for the non-dairy eater.

I second the bagels. Plus it's farmer's market season so you can probably get local preserves.
Don't neglect the vast world of soy products. Firm tofu is great stir-fried with vegetables, or you can make smoothies with silken soy, frozen fruit, and soy or rice milk to go along with the egg dish and salad.
Chilaquiles are great and won't dry out like some egg dishes can at a brunch.
One of my favorite brunch menus is a Spanish tortilla at room temp (easy make ahead dish) garnished with diced fresh tomatoes and served with a simple salad of mixed greens with vinaigratte and crusty bread with olive oil for sopping. If there are non vegetarians invited as well, you can serve it with some nice thinly sliced cured ham for them. Perfection with strong coffee and some fruit.
How about something like fresh fruit salad, scones (you can make them with vegan butter-substitute), and some kind of egg dish? Also, as one suggestion to the breakfast tacos idea (yum!), you could use some veggie taco "meat" sold in the refrigerated section - there's a great brand called SoyTaco.

More on the lunch side of things, Orangette's French style lentil salad is a huge hit even with non-vegetarians at my house. It would probably be lovely with a fried egg on top and some nice crusty bread for sopping up the delicious dressing. I like it best if it's been sitting for a day.
A few ideas:
Sweet potato hash with a sunnyside up egg on top; roast mushrooms on levain with herb scrambled eggs; spanish potato omelet (tortilla espanola) and a salsa made with a touch of smoked paprika (pimenton) w/ or w/o eggs; ratatouille filled egg omelette; fruit smoothies and muffins; oatmeal made with fruit juice instead of dairy (think apple juice or peach nectar and serve it with fresh peaches, walnuts, honey, raspberries); strawberry crepes.

Also consider a french toast with fresh fruit, nuts, and vegan yogurt.
I love to cook eggs in individual ramekins. Just crack a couple of eggs in, some mushrooms, onion, vege sausages, fresh herbs whatever else your vege friend eats.
Bake for about 20 minutes.
Serve with little triangles of toast.
Ooh all the suggestions sound so delicious.. Me, I'd go for asparagus frittata and toasted mini bagels and fresh grapes w/ cheese and grapefruit.. in fact, I think I'll have that tomorrow. Yum!

I recently made the Veggie tarts from Living May 2007 Not only did they have great presentation but,the taste was "to die for" That's what my guest said.
has no one said waffles? lots of waffle recipes are vegan and you can serve them with a whole buffet of seasonal fresh fruit and real maple syrup. oh yum.
These golden spice pancakes are delicious and hearty, made with whole wheat flour and orange juice. You can add whatever kind of fruit you want. YUM!

I'm a fan of Middle Eastern-esque breakfast. For the non-vegan: scrambled eggs with harissa, a little bit of hummus, some olives, pita, and a tiny salad with lemon vinaigrette.
Or for vegans, Deborah Madison does a few nice tofu scrambles: basically crumble tofu, add turmeric. Saute onion and lots of fresh veggies and then add in tofu and fresh herbs. Spanish tortilla -- kind of like a frittata with potatoes, onions and eggs -- is a really good (and filling) brunch option. I've been a vegetarian my entire life (I eat fish now though), so no-meat breakfasts is standard! Other ideas: fruits, cupcakes or muffins (easily made without dairy). Good luck!
What about a vegan strata? Tasty slices of olive bread layered with caramelized onions, portabello mushrooms and spinach with soy/rice milk mixed with egg replacer. Garlic and herbs, some smoked salt and freshly cracked pepper and you're all set ...

Endless and delicious options! I am vegan and allergic to wheat but fortunately can eat spelt. Bagels are off the list for me but there are some great spelt english muffins out there.

As a lactose-intolerant veggie with a soy allergy, my fave brunch is a breakfast burrito with:
scrambled eggs (with diced red, yellow & orange peppers, jalepenos, tomatoes and green onions)
refried beans (I just use any type of canned refried's, add garlic powder, a splash of hot sauce and my special ingrediant...a dash of soy sauce)
sliced avocados
salsa
YUM!
