Q: I know there are lots of ways to turn a baked potato into a meal, but I am looking for ways to turn a baked sweet potato into a meal.
Any suggestions for toppings that would add some protein?

Editor: Melissa, we love sweet potatoes with walnuts and maple syrup for breakfast, and with bacon and yogurt for lunch. Black beans are also a great topping.

Alternately you could go african with it an top your baked potato with shredded chicken, and a quick peanut sauce made of peanut butter thinned with yogurt, black pepper, chopped onions, peanuts and cilantro and it would be pretty hearty and delicious.
As Faith said, black beans are a wonderful pairing (our favorite). Brown some onions, add some ground cumin and the beans. Add salsa, maybe some sour cream or other cheese if you like. Or Just top with chili, vegetarian or otherwise.
Or go in a slightly different direction with Barbara Kingsolver's sweet potato quesadillas with Swiss chard.
Anything you could do with a regular baked potato, you could do with a sweet potato, couldn't you? Plus sweet potatoes lend themselves to being sweetened, as Faith mentioned.
I just did this the other night. I mixed the potato flesh with a little Earth Balance butter, cumin, and adobo sauce. Then topped it with black beans, salsa verde, and cheese. I do another version mixing the flesh with walnut oil and spices and topping it with either feta or ricotta salata and toasted pumpkin seeds.
For extra protein you could add hemp seeds or lentils.
I love adding cottage cheese to my sweet potato. Yum!
I lived on this when I was pregnant: baked sweet potato with peanut butter and soy sauce mashed in. My sound funny, but it is GOOD and instant!
A couple of ideas: 1. Sweet Potato, Zuchinni, Onion and Mozzarella Galette with a side salad 2. Curried Sweet Potato Soup with some garlic naan.
If you're not a vegetarian, I'd top it with picadillo--make it with pork but leave out the potatoes. The sweet potato will play the part of the fried potatoesin the picadillo. Baked potatoes stuffed with some type of smoky sausage is a really great (and filling!) meal.

I usually cube the baked sweet potato and just add it to some sauteed onion, tomatoes, and black beans with cumin, coriander, etc and serve over brown rice with a dab of greek yogurt, but you could leave it whole like the recipe if you want to have more of the "baked potato" kind of feel....super quick and delicious!
I love topping my white potatoes with brussels sprouts sauteed with bacon, onions, and golden raisins. The mixture would be yummy on top of a sweet potato too.

Remove skin, add grilled onions and peppers, black beans, cheese, avocado, salsa, and sour cream. Wrap in tortilla. Sweet potato burritos are delicious!
I love to add black beans, diced tomatoes, and guacamole to my baked sweet potato!
Fried egg! Greek yogurt! Carmelized onions with wilted kale or spinach + toasted pine nuts! All of the things that are delicious go with sweet potatoes. :)

My favorite is sauteed kale or chard (with bacon, if you're not a vegetarian), and then topped with plain greek yogurt. Very filling and the salty/sour flavors go great with the sweet potato!
BBQ shredded chicken and a little bit of chipotle in adobo sauce.

At my house, this is considered the highest calling for a sweet potato!
We frequently top white potatoes with chili or pulled pork. I imagine they would both be pretty tasty on a sweet potato too.
Funny timing, I just roasted up some sweet potatoes for the week! This morning for breakfast I tried Larsie's peanut butter & soy sauce-tasty!
I second the Eating Well recipe-that's my go to healthy/cheap meal. Also love sweet potatoes roasted and topped with lime juice and chili powder-I got the recipe from Bittman:)
I'm thinking topping it with toasted pecans, maybe some bacon or some leftover ham that's been cooked up to get a little carmelization going, and maybe a soft melting cheese or a drizzle of maple syrup and a slab of butter? A simple salad of mixed greens and a light, homemade viniagrette on the side would round it out a bit.

It is creamy, like Macaroni and Cheese, but it does not have cream or cheese! The sweet potatoes and garbanzo beans become creamy, and the garbanzo beans add protein, too!
For breakfast, I add a scoop of lowfat ricotta, a sprinkle of cinnamon and a squeeze of agave syrup (or maple syrup) and smash it into the hot potato - my family can't eat it fast enough!!
