Q:  I'm a first-year middle and high school English teacher, and as a result, my schedule is insane, and I've slacked off on cooking because it can be time-consuming.

What are some quick, vegetarian meals that work well as leftovers the next school day? Hoping all of your busy, clever readers might be able to help! Thanks!

Editor: Molly, how about chickpea and other legume curries? These reheat beautifully (and freeze nicely too). Try chana masala and curried vegetable and chickpea stew.
