Q: I'm trying to get more oatmeal and fiber into our diet — especially my husband, whose cholesterol runs higher than normal. Quaker makes Breakfast Bars that he enjoys, but he's one of those people that actually gets tired of eating the same old breakfast food each morning and they are kinda expensive.
Any recipe ideas for breakfast bars or other items packed with oatmeal that I can try?

I LOVE those peanut butter monster cookies featured a few months back!
I make a version of my favorite starbucks breakfast from years ago: the Cranberry Oatmeal Mountain Bar. I start with this recipe from allrecipes, and switch out the raspberry jam for homemade cranberry jam:

Take 1 whole bag of frozen cranberries, 1 cup sugar, and simmer until the cranberries have released their juice.
I think any berry jam would be pretty good, and would allow you some flavor flexibility.
They're not the healthiest... they have a fair amount of sugar, but they are delicious, and I have been known to eat a whole batch in like 2 days.

I have been making banana oatmeal chocolate chip cookies from cooking light for the past month. It has been making my morning coffee fabulous!
I blend oatmeal into my smoothies. I put about 1/4 cup of oatmeal in the blender, whirl it so it's a bit powdery, then throw the other stuff in. I know smoothies can seem a bit time consuming in the morning, but if you prep stuff ahead of time it's just a matter of plopping it in the blender and letting it whirl.
I have two: the first one is oatmeal muffins with berries, and the second one is oatmeal bars with dried fruit. Hope this helps!
I love peanut butter baked oatmeal the most, but I've also make maple, blueberry, banana, and pumpkin versions (all sugar-free, using Splenda).

I mix oatmeal, crushed mixed nuts, some chopped dried fruit, vanilla protein powder, and a bit of honey. Pack it into bars and refrigerate.
I make these banana peanut butter drop cookies for my son and he eats them for breakfast. I don't use as much sugar as the recipe calls for and I omit the chopped peanuts. I also add a little vanilla and cinnamon. You could really change it up however you want. On the savory side, maybe you can add oat bran to miniquiches or omelettes made with egg substitute? I don't cook oats only for breakfast, sometimes I pulverize rolled oats in a food processor and use that instead of flour to thicken soups or creamed spinach.
+1 on Kitchen Thymes. I make granola using Mark Bitttman's recipe found in his Food Matters cookbook. Tons of oatmeal, infinitely variable, and way less expensive than others.
Thanks for the suggestions. I'll try some of the bars and the muffins. He won't eat a bowl of oatmeal or anything that makes his fingers sticky. Worse than a kid!

You can also run oats through the blender or food processor to make flour, which you can use to make pancakes and waffles!

I like to mix uncooked quick oats in to plain greek yogurt with cinnamon and brown sugar or with sliced almonds, honey and a dash of vanilla. The texture may be an acquired taste- I like how it adds some body to the yogurt.

I have oatmeal with dried cranberries, a little brown sugar, and cinnamon just about every morning. This *was* my winter seasonal version of oatmeal, but I can't seem to give it up!

I and my family are big fans of the breakfast bar recipe in the Nigella Express book. Oats, nuts, dried cranberry, coconut, condensed milk. Certainly not diet food, but they *really* stick with you.
Take the suggestion of the smoothie with oatmeal above, and make the smoothie the night before. The oatmeal thickens it up nicely.
