Q: My nutritionist wants me to incorporate more cooked vegetables into my diet. I have plenty of recipes for carrots, cauliflower, string beans — but nothing really for peas. I'd like to avoid mixing them with starches such as pasta and potatoes.
What I'm really looking for are other ways to season them or cook them as a side dish besides just adding a little butter and salt after I boil them. Any ideas or recipes?

Editor: Jessica, we love this time of year, because peas are coming out of the garden and the farmers' markets instead of the freezer. A few ideas: It's Breakfast Week around here, and so we have omelets on the brain. Why not throw some peas into an omelet with a little mint or parsley? You can also try one of these yummy dishes:

I've been having this for lunches this week (minus the paneer--I just wanted veggies). I like it with brown rice, but it could probably stand alone nicely as well.

I like a nice pea puree or "mushy peas" as the Brits say. Just boil up some peas with a clove of garlic (it won't get cooked all the way that's okay). Then blend in the blender with a tiny bit of olive oil and if you like, a small dab of sour cream.
If you like, season with salt & pepper. It comes out BRIGHT green and really delicious.
peas are technically legumes....you can pretty much throw them in anything you wish: pasta sauces, eggs, salads, soups, ect. i love making a fresh baby spinach salad with peas and bacon.

I tried it several years ago and it was great.
I always add peas to any of my Moroccan stews or Indian dishes that I whip up--no starches, just lots of veggies mixed with sauteed onion, garlic, tomatoes, and spices.
Also, I make a simple pea soup that everyone goes gaga about: saute an onion and some fresh garlic; add a few cups of nice chicken or veggie stock; add in fresh or frozen peas till just warmed through (only takes a few minutes); puree all, then stir in a bit of plain yogurt, a squeeze of lemon juice, salt and pepper, olive oil, and chopped mint and dill. Serve with another dollop of yogurt on top.

I love to sautee sugar snap peas in a sauce made from soy sauce, ginger, and sesame oil. You can mix in whatever else you have at hand - carrots, broccoli, tofu, cabbage... of course I like to eat this brown rice, but you don't have to.
Make a batch of Pea Pesto and use as a condiment - it's delicious and tastes like spring!

I like ATK recipe for pea soup...but it's fairly time consuming and probably not what your Doctor had in mind. ;)

Ahh, thank you Leapkate!!!! I had mushy peas in England, and haven't been able to find any pubs or anything around here that serve them, so maybe I'll just have to make my own! I loved them, though, kind of a nice alternative to mashed potatoes or something.

Quiche is also a good way to use veggies. I usually do a crustless quiche with random vegetables. I bet peas would be perfect with some chard and caramelized onions in a quiche.
