Q: I will be cooking Valentine's Dinner for a large group of people and I decided to cook chicken cacciatore. For the side, I heard fennel was a good match with chicken so I bought one and tried it but I really didn't like it.
Do you have any good, refreshing vegetable sides for this chicken dish?

Editor: Julia, as avowed fennel-lovers we hate to see you give up on it so fast! Fennel is indeed an excellent side dish for chicken, especially when the chicken is cooked in a hearty dish like cacciatore. Fennel has to be sliced paper-thin, though, so that its licorice flavor doesn't overwhelm the palate. Mixed with citrus and other greens it's very refreshing. Here are a couple favorite recipes:

Sauteed snap peas are my go-to vegetable. Easy, fast, tasty, and light. Plus a nice crunch which would pair well with soupy/saucy food. I sometimes add dried mint to them too.
Maybe red cabbage with sherry vinegar? The dish doesn't need much accompaniment, it's pretty filling on it's own:)
I'd say roast some nice red peppers, toss with a little extra virgin olive oil, fresh parsley, salt & pepper & a little minced garlic for a fresh, light side. Oven roasted potatoes sliced in thin pieces would work well as a starch if you're not making pasta with the chicken. Also, grilled eggplant (can be done in the oven under the broiler) would also compliment this dish.
I'd like something green with a rich stewed dish like that. Maybe some roasted broccoli or zucchini? Just simply prepared with olive oil, salt, pepper and finished with some lemon zest.
I would go with simple and green as well. Maybe a kale salad: thinly sliced with a meyer lemon vinaigrette. Something acidic to contrast against the richness of the main dish.
Salad w/ a vinaigrette. Bread. And a bottle of wine. Don't overthink it and put your efforts into finding a really great dessert!
roasted cauliflower is fantastic.
also- try something green, to balance out the red.
some simple braised kale with onions and raisins would be great.

What did you do with the fennel? Preparation matters. It is terrific raw, thinly sliced in a salad with button mushrooms, endive, and parmesan cheese. Also works well to add a tiny amount of truffle oil if you like it.
Roasted fennel, carrots, and parsnips would also work well. Maybe a little honey at the end.
Sometimes I think I am the only person who dislikes licorice to the point of loathing. I don't want to eat anise-y cookies or Italian sausage or even tarragon very much. Fennel is OUT for me after I tasted a little frond in the supermarket!!
I made chicken cacciatore for New Year's! Since my recipe was pretty packed full of veggies and served over pasta, I decided to include the veggies in the appetizers. A little salad and some crudite worked out great.
Green salad: mixed greens like romaine, arugula, radicchio with vinaigrette dressing. Simple simple since the main dish is robust. Add some crusty bread. Splurge on a fabulous dessert like cheesecake or tiramisu.
Pollo alla cacciatore needs a side? Over some brown basmati rice (I'm a bad Italian, I don't like pasta), it's a one dish meal in my house.
My daughter-in-law makes a crispy stir-fried Brussels sprouts dish that I have seen people fighting over. Lots of recipes on the web.
I second the escarole or just a simple salad and some good bread.
