What Are Some Good Low-Carb Vegetarian Lunches?

Good Questions

Q: What are some good, filling, low-carb, vegetarian meal suggestions? I'm switching from a semi-vegetarian diet to a more meat-based, very low carb diet for medical reasons, but I would like to keep 3 to 4 meals a week vegetarian if possible.

Low-carb, veggie lunch suggestions would be very much appreciated.

Editor: Sarah, one good option for you is eggs. Frittatas and quiches can be made ahead of time and reheat very well for lunch.

Readers, what would you suggest for Sarah's lunchbox?
