I'm thinking a really easy and foolproof sous-vide hack would be with a covered casserole in a warming drawer.
Does anyone out there with a warming drawer volunteer to test the theory? Sadly, my oven is 40 years old and has no such feature.
I guess I should try it this way before paying $1000 for a polyscience immersion circulator.
