I spent 4 months in Sicily and ate aranchinas almost every day I was there. However, not one of them had beef in them (like the link you provide). They were all just risotto, cheese, and breading.
Why are aranchinis hot all of a sudden? It seems like they're popping up everywhere I look...which isn't really a bad thing, they're delicious! But curious...
It was probably inevitable after the risotto wave started a couple of years ago.
I made arancini the other night, stuffed with feta because I didn't have any good melting cheese, and I had them with pesto. Totally inauthentic, but crazy delicious.
Many arancini I encountered in Sicily sadly contained ham, much to my vegetarian dismay.
