@mambear949 yeah they say leave it off for a vegan soup.
As a vegan and avid reader of The Kitchn, I have to say I am LOVING this week. It's hard to break out of my "I'll read it but can't make it" assumption about recipes. But really, giving us one recipe out of three that leaves out an essential ingredient to make it vegan? There are SO MANY vegan chefs out there whose recipes you could be trying and recommending.
