Honestly, I always skip this step, fork or otherwise. Just so much easier to roll a snake and cut it up then dump in the water. I don't think, of all the gnocchi I've had in Italy, I once saw any with ridges, actually.
seal the gnocchi? huh? please explain.
I don't know about "sealing" the gnocchi, but the ridges, and "dimple" created when rolling are good for holding a little extra sauce than the non ridged variety. As for me, I'll take and make my gnocchi's either way. I don't discriminate when it comes to those tiny pillows of delight!
