Recipe: Joanna's Creamy Adsuki Bean Pie
Another bean pie! We already had one pie made from beans in this Bakeoff, and it piqued our interest. We were curious whether anyone else made a bean pie, and Joanna responded with her own recipe that marries her love of adsuki beans with her love for pie.

This recipe came from my love for adsuki bean desserts and my love for pies. One day I decided to put the two together and it has become a must have pie for me.

Creamy Adsuki Bean Pie
Ingredients (Cooked Adsuki Beans):
1 small bag of adsuki beans (about 2 cups)
4 cups water
1 cup brown sugar
1 teaspoon orange zest
Ingredients (pie crust):
3 cups all purpose flour
3 tablespoons sugar
1/2 teaspoon salt
1/2 cup butter
8 oz of sourcream
3 tablespoons of milk
Ingredients (pie filling):
2 cups cooked adsuki beans
1/2 cup sugar
1 teaspoon of vanilla extract
3 large eggs
4 scoops (about 1 3/4 cups) creamy vanilla icecream slightly softened
Instructions (cooked adsuki beans):
Soak adsuki beans in a bowl of water for a couple of hours or overnight. Rinse the beans with clean water a couple of times. Put beans in pot with 4 cups of water, brown sugar and orange zest. Bring to a broil and reduce heat to simmer. Cook beans until tender. The beans should be whole for the most part but very tender. Most of the moisture should be gone.
Instructions (pie crust):
Mix together flour, sugar and salt. Using a pastry blender or fork, mix in butter until it resembles course crumbs. Mix in sourcream and milk and knead until it forms into a ball of dough. Wrap in plastic wrap and place in fridge for at least 30 minutes. Knead a couple of times on a floured board. Roll the dough out into a circular shape. Roll the dough onto the rolling pin and lay onto the pie pan. Piece holes into the pie crust with a fork 5-6 times. Blind bake for 10 minutes in a 350 oven.
Instructions (pie filling):
Blend adsuki beans, sugar and eggs until smooth in a food processor or with a hand blender in a large bowl. Add vanilla and ice cream and blend until smooth. Pour into pie crust and bake at 350 until the center has solidified. About 50 minutes to an hour. Let cool and refrigerate.
